I was planning a brew this evening.. a hobgoblin style beer..
Anyways I was out walking with the kids and the usual things went through my mind...one in particular was 'oh I wonder what would happen if I used a Belgian yeast this evening"
I'm not at home yet so weights arenot in my head..
Maris otter base
Chocolate
Cara pils
Crystal 40
Yeast choice fermentis abbeye ale or us04
Any guidance as to what it'll be like with the Belgian yeast
I have done a couple of attempts at this with us04.
I would imagine you would get some plum, spice, higher ester and phenol levels with this. Probably not what you would want in a goblin clone,but it could be very interesting. Will the abv be high enough for the Abbey yeast?
Do you mean US05 or S04 ?
Very different yeasts. I used the fermentis abbaye once and was happy with the resukts

It's coming in at 5.9%
I'm kinda on the fence regarding the clone aspect. With the abbeye at home I'm leaning towards an experiment CPR Christmas and the craic..also I'm lkegging an ipa off a US 05 cake so that leaves a third option...ah feck it
I would say it would be nice, it's an interesting idea and definitely has a Christmas feel to it, I would definitely give give it a lash
