I am planning to make a stout for Christmas. Do you think this recipe will work Ok.

Looks grand. Though I'd recommend spending an extra few few on a liquid yeast culture. Some brewers like the S-04, but I can't stand beers made with it. I know a few others on here agree.
The CaraPils is for body and mouthfeel, but I think you could sub it with some more flaked barley, or just leave it out altogether. It seems to crop up in a lot of American recipes.
Personally, I'd like a bit more roasted malt in an extra stout.

Thanks for the replies. I might up the roasted barley to 2 lbs. would that be too much. Had the carapils in because I tried a stout before and although it was nice it didn't keep its head and when I have used it in my ipas it has worked well. Not sure about the water but there is an overflow pipe from a communal spring well just up the road from me that I was thinking of using this time. Before I have just used tap water. Have some us 05 would that be better.
2 lbs would be too much, for me anyway. Try the recipe as is, and you'll be able to dial in your roasted malt next time you do the recipe.
Us05 would be a better bet, especially for a bigger beer like the recipe you're doing. It dries out beers a lot so it can work better with larger grain bills.

2lbs or 950g of roast barley is a huge amount, a recipe would normally have a max of 200g-300g of roast grains.
I'd happily go up to around 8-10% roasted grain in a stout.

Made it yesterday. Took the roasted barley down to 22 oz (about 600gms). I also upped the bittering hops a little as I used more water. I have ended up with about 25 litres in fermentor with an og of 1060 which is strong enough for me. Used us 05 in the end up as I wasn't sure about the 04 and didn't want to undo all my hard work. Might try the liquid irish ale yeast next time. It's bubbling away at the minute at19 degrees c. I will update you on the taste when it's ready.
Personally I'd prefer O5 or Nottingham for a stout.
My go to stout has 0.5kg roasted barley and 0.5kg brown malt in it. Find it makes a really nice roasty toasty stout. Chocolate malt can also be a really nice addition.

Not a big fan. Much prefer a cleaner yeast.

I like my stout like the individual I came across on a Dublin street recently who proceeded with gumpto to clear the contents of his 40 a day throat and declared to all present after he projected skywards said clearance as it bounced along the pavement, "Pick the bones out of dat"

Yeah used 004 for my last one and it's got a good kick of diactycl. A lovely stout but think I prefer the ones I do with us-05. Cleaner and a but drier. Also I do a mash at 55, then 63 usually.
I know 05 is a workhorse of a yeast & demon to go and is tolerant of high and low temps and gravities I just found in a side by side comparison between it and 001 and Bry97 on an IPA it stripped a huge amount of malt profile out?
Depends. For a dry Irish I've gone as low as 62 but for a big chewy stout yeah up to 69.
I prefer notty over O5. Find O5 strips a lot of flavour.

Fermented with Nottingham ale yeast. Dont use S-04, it leaves too much residual sweetness for an extra stout.
If youre using 2lbs of roast, ensure you cold steep and add liquid to sparge, otherwise you end up to acrid. I cold steeped 1kg and it ended up perfectly smooth. Ultra smooth pint.
I also served this through a beer engine, which added to the creaminess. Def the best stout I've made.

Leann Follain is fermented with nottingham so that's why I went with it for my extra stout as well.

Proper airation and sprinkle on the foamed up wort has never caused me any problems.
Notty would be the dry yeast I use all the time. Don't know when I last used O5
tbh I always sprinkled with the logic by the time its reached the wort on foam its rehydrated which i gather is ok on certain dry products.
I wonder how Mangrove Jacks Liberty yeast would do in a stout. Descriptions of it have me thinking its like wlp051 which is my preferred yeast for stouts and porters at the moment. Thats a clean yeast that doesn't kill the malt.
Fermentation seems to have stopped at 1030. I take it that this is too high. My packet of s05 was lying at room temperature for a few months although it is still in date. Should I rep itch some 05 or will I try the 04 I originally bought as it is fresher. Wort tastes ok could it be finished this high i mashed at a high temp 69.
Keep your dry yeast in your fridge in future.
Your mash temp of 69 wont give you a 1.030 finish on that beer. I'd throw the 04 in. The 05 will either be dead or will dry it out too much. 04 isn't personally my favourite but when you're trying to save the beer and get a high finishing gravity (by normal standards) then its probably the better choice.

Rep itched with s04. Rehydrated in water first then added some of the stuck wort. Was starting to show some signs of life so chucked the lot in. I am hoping it will come back to life by tomorrow.
