Can't help you with brewing courses but you could give Lee Valley Brewing Club a shout on here and I'm sure they could help you out.

As for tours Rising Sons, Fran Well and Cotton Ball do tours. Black in Kinsale do as well but theyre out of season at the moment.

At the risk of sounding cheeky, there were lots of pointers here...

You are not going to learn brewing by visiting a brewery.
Professional brewers have spent years mastering their craft, and still learn new things every day.
This they will not be able to impart in a single day.
Where are you based? Maybe someone nearby may be brewing who you could shadow.
There are week long IBD cert courses (eur600?) in the Well from time to time, but honestly you would be wasting your time unless you have the basics.

Yep, tours only run over the summer months and close for the winter/spring season

Good tour and nice little tasting room down there too.

Of course.  Was afraid it was a fashion thing,  where black is sooo last season.
I'd be scarlet in my wee black number!
