Title: Sweetening and carb
Post by: Donny on February 11, 2017, 09:52:03 AM
Recently made a batch from lidl apple juice. I want to backsweeten it with DIY frozen consentrate and add some cranberry juice. I also would like to bottle prime it.

Do you think adding cranberry juice will be enough to carbonate it in the bottle without adding more sugar? This is my first cider batch so I'm not savy with everything yet.

I'm not sure you can backsweeten without killing the yeast (heating or campden tablets). Otherwise it'll chew through it and you'll be left with bottle bombs

Read somewhere that you can pasteurize the beer once in the bottles by halfway submerging them in 88C water for 10 min. Bit the bullet and bottled last night with cranberry and the concentrated apple juice in the bottle bucket. Bottled 2 small testers. Going to open 1 in 3 days to check the carbonation and then if its ok Il pasteurize the rest. Extremely risky I know but I needed the carboy the cider was in
