Cumbersome title.
Hey All,
The next barrel project is upon us.
The Imperial has spent nearly 5 months in the red wine barrel, and is tasting very nice, I want to empty that barrel and refill it with a new beer - a 1877 Truman 4 that will be aged with brett, there is another barrel free but it has bacteria in it other than brett.
The recipe is very straight forward,
Abv 7.28
100% pale malt
IBUs - 125
90 mins Cluster
30 mins Goldings
Mash 66.5 c
Sparge 77 c
Yeast WLP 013 London Ale
Brett added at secondary (which could be at home or when going in the barrel, preferably at home)
More to be fleshed out about the recipe for sure, just want to get an idea who would be interested - we have 225 litres to fill...

Yea so, about that..
The recipe has the og at 79 and fg at 24, now with the brett in secondary and aging for about 6 months, that doesn't make much sense.
More realistically it would get down to about 10 so the og would only have to be 65 to get to our 7.2
any thoughts??

Bit of this recipe flying around everywhere, so I'm just collecting the ones I'm aware here. Fionn can confirm, deny, or contradict:
OG-FG: 1079-1024 (from Pattinson's book)
Yeast: Fionn says WLP013 but WY1028 is also listed in the book and is supposed to be the same

Can we lower the OG?
Can we presume that with the brett, and extended aging the fg will arrive at least at 14 and quite likely 10?
I don't want us to make an imperial pale is all...
Yeah, makes sense. So maybe 1068 or so?
Just wondering how much grain to get in and use. OG is kind of a handy thing to know...

What time are we emptying & filling on Sunday? Allianz GAA finals are on all day (2pm & 4 pm - http://gaa.tickets.ie/Listing/EventInformation/34451) so the Croker area will be manic enough 12-6pm
could either do early morning or later in the evening?

For anyone driving in, Fionn's place will be inaccessible during the times Dave mentions (and probably a bit before and after those times) as the road will be closed. I can come in early morning or later in the evening.
