On a whim, I bought some peat smoked malt, thinking I might use it in a stout. But searching the web has yielded pretty negative results for peat smoked malt. Has anyone used it in a stout before? Any advise?
Less is more with that stuff 🤢
A small percentage makes a lovely addition to a stout. Never understood the aversion to it amongst the home brewing writers like Jamil etc. But you certainly need a light hand with it. 3 ounces will make itself known in a standard 5 gal batch. Do a search for Stone Smoked Porter. There's plenty of clone recipes out there. If it's good enough for Stone, well..
Thanks bubbles, I'll google that now
Mikkeller beer geek breakfast stout is another one. I made it once with rauchmalz. If I remember right it could have taken a bit more smokiness so maybe peat smoked malt would work.

Just checked my notes.. I used 125g in a 19 litre batch. It doesn't sound like a lot, but it delivers quite a punch. As long as the malt is fresh, at least.
Plenty of peat stout available from Liffey Brewers...
