Well done on the gold. I had a can of Yellow Belly Citra Pale Ale at the weekend and pilsner and wheat came into my head - would you say it tastes similar to that beer?

Hi Ciaran, thanks for the congrats. I had the Yellowbelly Citra myself at the weekend and I can safely say that my Pale Ale tasted nothing like the YB one. I think single hopped Citra beers have a very distinctive taste with the Citra giving a soft and fruity tone. I think the Citra lets the malt shine through more than other hops. This ale had a nice light body thanks to the Pilsner malt. The use of Simcoe gave this beer an earthier taste and sharpened the taste (if you know what I mean).
It is a lovely beer though. If you get the chance to brew it I don't think you'll disappointed.
Declan will give you the recipe for Yellowbelly Citra Pale ale if you drop them a tweet. It does have wheat as far as I remember.
Good to know, an excellent beer it is too. I follow a couple of the lads from Yellowbelly there but I don't think I can private message unless they're following back unfortunately.

So you just threw in the 0min additions and chilled? Just interested in the different processes. Congrats on the Gold BTW.
That's it. The hops were in the kettle for as long as it took to cool it ivy the fermenter. I reckon about 10 minutes. Thanks for the congrats.

Well done on gold medal! Awesome.
What did they say you could improve on for the remaining 9 points?

That's a question I like to see! How can you make this recipe better!!!!!
Let's see, I got the following scores
Aroma Appearance Flavor Mouthfeel Overall Impression Comments -
Very pleasant beer and brewed very well to style. Clean ferment with no off flavors. I think beer could do with a little more carbonation
Excellent representation of style! Well balanced beer with really lovely tropical hop aroma.
Based on this there is not a huge amount that I can improve upon ... more carbonation maybe?
More carbonation and/or perhaps a slight edit to the malt bill to change the mouthfeel. And if the beer maybe didn't have to wait 2 weeks between competition closing and judging you might have got some more aroma points. You're really working on the finer details there though.
Lads your not going to score higher than that other than with fresher hops, well done Mick top of the class!

Cheers CH. Yeah it was a pretty flawless beer. Like you said maybe fresher ingredients might have eeked out a few more points but I was pretty happy with that result.
As Thomas mentioned in an earlier post "You're really working on the finer details there though"

Aha, I wasn't barking up the wrong tree after all :) You know what this means, now I'm going to have to this and brew mick's to compare them. Thanks for the post!!

Thanks for letting me know how you got on. Glad it turned out well for you. Good luck with the second batch!
This looks great, thanks for sharing it and congratulations on the win :-)
I'm going to brew this tomorrow and have a question on the dry hopping - how far out from bottling did you do this?
Thanks again,
Flim
Hey Mick, just to echo all that has been said already - Congrats on the Gold, and thanks for sharing the recipe.
I brewed this yesterday, the only difference being that I used the American West B5 Yeast (the one from HBW at BrewCon). Went into the fermentor at 1.060, so looking forward to trying in a few weeks' time. I'll report back how it goes.
Cheers,
JDC

Thanks for the congrats,
Re the dry hopping. I dry hopped this once I reached FG. I just added the hops to the fermenter for 4 days before transferring to a keg and cold crashing.
HTH,
Mick

You're more than welcome. Happy brewing!
Thanks for the recipe and congrats, what ABV did it come out at in the end? Also, with the mention of aroma, how long did you dry hop for?

4 day dry hop
Ah, that's good news - I was meant to keg this yesterday after 3 days dry hopping, but kids and All Ireland finals got in the way. Will be kegging this evening so with a four day dry hop ;D
Again, I say thank you for sharing!
Just dry hopped today. Went from 1052 - 1010 and if the sip (okay, good mouthful) from the gravity sample is anything to go by, I'm in for a treat in a couple of weeks :-)

Yeah it's a tasty beer. All this talk of it is tempting me to brew it again. Enjoy.
Kegged mine yesterday. Finished up at 6.8% which was a lot more than expected (damn Grainfather efficiency). The smell was amazing, like a tropical fruit juice. Will report back on the taste test in due course, but the signs are looking good.
I'll help you taste it Johnathan ;)
So, finally tried this yesterday from the keg with the company of POB. Absolutely cracking beer. Can't believe that there is only two hops as there is so much flavour. May have to dial back on the grain next time brewing on the Grainfather to get the ABV down, but will be enjoying this one. Thanks again for sharing and can see how it was a gold medal beer.
