Title: NBC 2017 Cat 23F: Fruit Lambic Gold medal

3Kg Pilsner
500g Torrified wheat
1080g Wheat
Mashed at 66°
31g Saaz FWH
Collected ~23L
OG 1.049
Pitched wlp655 and some commercial sour dregs (3Font, Orval, Marriage Parfait) and some additional pediococcus at room temp
Aged for 9 months. pH 3.28
Added 800g frozen sour cherries to a demi-john and filled with beer to top to minimise head space
Re-fermented for 2 months and bottle conditioned
Could do with some changes to aid head retention which non-existent

Congratulations!

Did you carbonate it? I'd be nervous of putting in a regular 500ml bottle.

Super stuff Simon, I can still remember you in "short brewing trousers" 3 years ago and now your winning frigging golds in a super tough high end categories, be pro next!

I did bottle conditioned the competition entries. They'd had about 11 months sitting around so I don't think bottling was a risk
