Hi fellow homebrewers I've a NEIPA in the fv now on its 2nd dryhop. I'm happy so far with the look and flavour etc. What I'm trying to work out is do I still cold crash it to try take out some(not all)of the yeast in suspension? The reason I'm asking is if I leave a lot in won't it all floc out in the btl over the next 6 weeks ? I used to hand over btls of hb and there might be a fingers worth of trub/yeast at the bottom. These days there's nearly nothing left just a fine layer. What do YOU do yourself . Hoping to get one or two answere from lads that have cracked it. Ty 😎
It's absolutely fine to cold crash. If your grain, yeast selection and dry hop is right, then it won't clear with a cold crash. I cold crashed my first attempt and also had it sitting in my kegerator for a few weeks and it didn't clear out at all. I even used whirlfloc in the boil. The only fining step I skipped was gelatin.
Cheers . I've never used gelatine but I left the whirlfloc out too. It's cloudy. I left a glass of it in the fridge yesterday and there was some yeast settled out so I'll go ahead so ty
Polyphenols from the yeast hop interaction, along with the high protein malt bill, give a lot of haze which don't settle out easily when cold crashing. The crash will drop the hop solids and heavier yeast particles and give a lovely haze.

I don't use whirfloc or Irish moss though do transfer too secondary fermenter for two weeks and bottle condition for two and very clear with minimal sediment.
