Will our market grow big enough for someone to start brewing with Brett here?

Brett is a special belgian style yeast. Wlp is selling some.
Not a huge fan but would try some.

Yea the two issues seem to be will I really want ~20 litres of a Brett beer and do I really want to risk contaminating my equipment...

Personally at the moment I'm brewing often enough to justify allocating a brewday to a brett experiment!

you really need to have a FV devoted to Brett to do it safely. The Brett flavours can be amazing. anyone into their Belgians will testify to that. completely different to regular beers. I'm partial to them but they cost the earth here.
