Hi all,
Want to do another sour barrel if ye are interested. I was thinking to do a repeat of the first brown sour, with any modifications/suggestions to improve it welcome.
This was the original recipe:
Oud Bruin
Target abv 6%
Target fermentables 76.5 - so mash at 68 degrees c.
target og - 1.060
Marris otter 78%
Munich type II 13%
Crystal Malt ecb 240 - 6%
Carafa I 2%
Roast barley - 1%
Desired water profile:
Ca 100
Cl 300
SO4 150
HCO3 100
5 ibus - some old cheesy hops would be best.
The last time we used straightforward ale yeasts - perhaps this time we would use proper Belgian ale ones?
I'll do 40 litres for sure, and more if necessary.

Right, barrel is over full, but we've always had a few who couldn't make it for some reason or other, and we've been short before too. Let's try a new method - post a picture of your brew here (indicating the exact quantity you have if possible) and you're in the barrel - first brewed, first in.
Does that sound fair?
Also, could you indicate if you are going to add brett and lacto? We only need about 80 l with them, I'll sour my 40, so just need two volunteers.

Actually, as much as I'd like to take part I think I'll have to pull out due to a combination of time constraints and not having a corny keg or CO2 for transport.
Just keep everyone on the list as people always pull out

I'll sour my portion. Could you update the original post with a deadline for getting this done?
With regards to suggestions for modification, anyone reckon it could do with being more bruin? Having one of the last of my bottles and it's almost more of a deep red than brown. Would some chocolate malt go well in this recipe?

Some carafa special would work well. You don't want roastiness in there (or maybe that's just me).
Is there a date for the fill? I'll be away for two weeks from Saturday which may rule me out

What yeast? Belgian or standard ale?

I used two different belgian ale yeasts for my 40 l

I might not make it.
Only days I cant make are the 25th-29th of September, and Beavertown Obviously.
How does Monday the 18th sound for the Barrel fill?

It's underneath the winebar on Russell Street, same road as Croke Park, after work - so probably start around 7. Alternatively ye can drop the cornies or secondaries into the winebar anytime before, now if ye like.
