Title: Cask brewing

I am going to brew a Cask Bengal Lancer clone soon. I was thinking of transferring from fermenter to cask with 2 plato left to finish and add finings as well. Any one here got advice speak up please.

I've brewed a heap of cask ales at home. When fully fermented I keg condition to 1.2vol. When I dispense with my beer engine I attach a dummy disconnect to allow air to flow through. Works great.

Just saving you redecorating; it's two gravity points you reserve.

I've just put a bitter into a plastic firkin (~40l) and I let it ferment out and primed with 100g sugar. I don't (want) to take regular gravity readings, I'd prefer to leave it be. I also used a different yeast and could not be bothered doing a forced wort test to see what fg is.

Re finings, never bothered. I use a relatively flocculant yeast (most British types are, except that new ESB one from Danstar), and wlp002 should be fine without finings. The finings are for regular movement, where a cask could be tapped maybe a day or two after delivery. That's not to say don't, just that you probably needn't.

I love doing the cask ale properly at home. Have you got a firkin or a pin? I would love a pin!

I have a special corney type keg for my cask with a filter fitted to the end of the spear. So not 2 plato but only 2 degree's :-\

Very jealous. They work better as casks than cornies anyway. And you can jam a soft spile in the inlet for more authenticity.

Yeah, two or three points. Three gives you more venting. Easier to remove condition than to add it. Keep it at the proper temp, soft spile it, and it'll condition itself.

Came from the old Dempsey brewery which they used them with kegs to serve DEMPSEYS Real Ale. It closed down back then and I had all them yokes but they all got dumped.

Seriously? No one got a West Donegal joke? You guys have lost your edge!  :P

What were they filtering out of the kegs? Yeast isn't going to be stopped by that, and I find it hard to believe that they dry hopped kegs. You worked there?

It's like an umbrella so as the yeast drops out and falls to the bottom it compacts. The bottom has a 15mm solid cup in the picture and the spear is pushed into that which also has the filter surrounding it to hold back the leaf dry hop.

Makes sense, the umbrella means a clear first pint. Did they fine with isinglass? Did they dry hop kegs in the 80s? And there was ullage on kegs then, unlike now?
