I made an extract version of this beer last year but I think I had fresh hops from the most recent harvest when making it. I remember opening the bag of cascade and thinking how they smelled amazing, I have not got smell of freshness to the same extent since.
I took it to one of the meets and it went down very well at the time so I decided to do an all grain version of it this year with a few tweaks. I have upped the hops and malt but kept the spices roughly the same as I want them to be detectable but not in your face. :)
I'm going to make it this Friday, mashing in before I go to work and do the boil when I get home that evening.

I'm leaving it all day as I don't want to risk being up till 2am brewing on Friday night (I'm a slow brewer... :) ). It saves an hour or 2 in the evening. I also don't want to be wreaked and in bad form at the brew day in tog the next morning.
