Alright lads, let's see if we have the numbers to fill this monster, or whether we need to lean on people.. ;)
1. Paddy Bubbles - 25 litres
Btw, our target volume is 163 litres. :o ??? :D
http://www.youtube.com/watch?v=HmL3m2zcoOI (http://www.youtube.com/watch?v=HmL3m2zcoOI)
I'm limited by the size of a corny keg for transport.
1. Paddy Bubbles - 25 litres
2. Shiny - 19 litres
Shiny if you have a larger fermenter could you not use it for transport? If you don't have a larger fermenter I might be able to lend you a 33 ltr job. I can also help you transport it via car if your stuck for transport.
Shanna
Yeah I do but it was more for practical reasons of getting to your place on the Dart.
I probably wouldn't have a huge amount more than that anyway.
My place is 25 minutes walk up the top of a step hill from the dart. As far as I remember you live out the ballsbridge area so no great food me to collect you when the time comes. Might do a run and pick paddy b on the way.
Shanna
PS: Changed the word hook to hill
1. Paddy Bubbles - 25 litres
2. Shiny - 19 litres
3. Shanna - 20 litres
Total: 64 - 99 remaining

Put me on and contributors from Wicklow on your reserve list if you need to make the numbers up.
John, we don't have a "reserve" list!! We don't have that luxury at this stage! :)
We need committed signups, and we need em now! Send your Wicklow brewers over to us. (I'm not posting in the Lady Garden forum again after my last attempt... savages in there.. ;) :D)
Rossa, Padraic, any chance you could comment with your expected contributions?
Cheers all.
No Barrel Will go unfilled didn't want to preclude other South Dublin members, will watch the post and pm us what you need.
We have Novice Kit Extract Brewers paired up with AG folks so no probs there on numbers.

Don't you dare come back with a "Totally Rocks"

It's "totally rawks"!
Grandad!!
I'm in.
I'd hope so, it's your recipe! ;)
How many litres can we stick you down for?
I think Padraic is in too . I can do whatever is needed but I'd say increments of 20l. But one batch would be better.
Got my mash tun pretty much finished today, I fitted the insulation to the outside of mash tun.I need some good strong cling film/plastic shrink wrap and then I can finish it off. I tested the barrel I did from tog and thankfully there were no leaks :-) Made some space in the shed today to store the barrel. I also started measuring and cutting the wood for my brewing table. I hope to finish the table mid week and then it will only be sight glasses left to fit assuming they arrive in time to be used.

What's our plan of attack lads??
SO we are 5. Can did we not have 6? Was Padraic not in too? Ciderhead also?
Padraic's not going to be joining us. Ambitious fellow that he is, he's got 3 other barrel projects on the go! :D
Not sure about Ciderhead...

Hi Paddy Bubble
I would be willing to try make a 2nd 20ltr batch but I am thinking what am I going to do with 40ltrs of 10% beer ;-)
I suspect I might need some help to get that 2nd batch done.
Was wondering if we would get away with not filling it completely?
Shanna
When you doing your brews? I worked out how much the grain and hops would cost for this and it came in around 45 euro to buy everything online. Have you any cost saving plans buying grain as a group etc. Might join in if you still need people .

Ps. Where are you based? Love to have you on board as we need some additional help to get this barrel filled.
I'm in Swords. I'll look into the group buys after work. Thanks for the links...
I won't be able to get a brew on for about 2-3 weeks.
I don't know if that's too late to be of any help but I'll contribute if you all think it's possible.
I can make 13 litres with my set-up.
Just popped by to see how's she cutting as we are all done in wickla and ready to go, no spares to contribute to SDB though apart from myself :'(
What happened here?
How can we get this back on track?
I bought all the ingredients for wickla and including barrel for 200L its working out at €25 a head
I could be tempted to join in on this one too, wouldn't like to see it go down the swany!
Only thing stopping me is FV space and the timing between this one and the wickala one.
Good man, we can show them how its done.
Frankly I thought SCD would be swamped, then forgot you all Drink Heino ;)
Yeah Ciderhead, it's been a bit of a let down to be honest. We had a good level of interest from people so myself and Shanna decided to press on with it. But a couple of people have backed out and other expressions of interest just haven't materialised into firm commitments.
We don't want to leave the barrel unfilled too long. I'm going to be pretty pissed off having lost 50 lids, and Shanna's going to have a great big barrel taking up space in his workshop while we decide what to do with it.
Andrew, JohnC, mcgrath, thanks for your interest, all contributions are welcome, regardless of the volume.
Let's give it a few more days anyway - just put your name down on the list above if you want to commit. We should aim to get brewing in the next week or so.
Cheers lads.
Hi PaddyB
We will make sure that your not left out of pocket re the barrel. I talked you into it. I ordered a bunch of speciality malt yesterday so no going back.
Shanna
I have ordered a fair bit of hops for it too...I will probably brew the recipe regardless though.
Come on folks, if Cara and Padraic can do one between them ;)
1. Paddy Bubbles - 25 litres
2. Shiny - 19 litres
3. Shanna - 20 litres
4. Cider head - 20-25 litres 45L if required
5. Rossa - 20 litres
They are potentially 200L barrels

I thought I might brew the recipe regardless too, but I just don't have the capacity at the moment (in bottles) to store that amount of 10% beer. I'm hoping for a nice lengthy aging period in the barrel so that I can get my bottles together.

Ok, it's not going to make a shite of a difference, but I've revised mine ever so slightly. I'll be doing 2 x 15 litre batches. With loss to trub, I'd say 27 litres is more realistic.

Ok folks now be quick as you are going to miss out.
If any of you amateurs are worried about expectations don't be, we did "Brew Buddies" in Wicklow so a novice was paired with an expert meaning that you shadow one brew and then brew yourself or borrow equipment.
Absolutely lift is on offer. Group brew night is still a possibility for the bank holiday weekend also. Realistically brew will take approx 4 to 5 hours by the time strike water is kicked off and last vessel is cleaned. I gave a hlt I can use to boil water with a 5.5 kw element so this should help.

Ok electrician brother has put the kibosh on multiple simultaneous boilers on the go. Shed wiring won't take b the extra voltage Unfortunately. Offer of lift to Blackrock is still on Shiny just means only one brew will be done.

I was more referring to a lift with fermented wort on the day we are filling it, its probably easier for me to brew it here and then bring it over when its done? I might need to borrow a bucket from someone, I didn't anticipate having 3 brews on at the one time. The girlfriend doesn't know about any of this yet.... :o
No problem with the lift off a full fermenter. Dare I say you probably need to get two extra buckets if your planning to decant to a secondary.

sorry i was ment to reply sooner but im probably in, was just trying to sort out the logistics of it.
we see if i can sort out transport tomorrow so will know for certain over the weekend.
assuming its all good it would be a corny full as thats the easiest for transport.

2. Shiny - 40 litres
3. Shanna - 40 litres
4. Cider head - 20-25 litres 45L if required
5. Rossa - 20 litres
6. Barfly 20L
7. AndrewL 20L (Me being cheeky but you did say yes!)
If Jimmy jumps on board we are good to go
BTW if anybody else wants to go for it jump in as I am sure Shiny, Shanna or I would be more than happy to pare back.
And to think 5hrs ago this was nearly dead, ok specifically for this project for anybody that needs ingredients collected from HBC to save you the €5, I am down there on Tuesday AM, please place and pay for your order and mark it for my collection.

If we could arrange a mutually acceptable time for collection (preferably with Shiny who I have promised transport with) then I could come over and collect you. Would you also need a lift back or I would you be back able to slum it from the day station?

Great news lads.
Just realised... I decided at the start of 2013 that I was going to make more "session beers" this year.

Well it looks like we're full. Happy days.
There still seems to be a little confusion on other threads about the capacity of these barrels. Ciderhead, you're still comfortable that we're shooting for 163 litres?
If so, shiny and Shanna might be able to revise their plans downwards? (and breathe a sigh of relief? :))
Oh, forgot to mention. There were some other interested parties, so speak now if you still want to participate. I'm sure the 40 litre contributors will have no problem scaling back their contributions slightly to allow other brewers to be involved.
Just messing about with the figures in spreadsheet here. If everyone rows back to 20 litres, we're nearly up on our target volume. I can do the extra 3 litres, as I'll have to do two brews anyway, unless anyone else wants to do it?
Paddy Bubbles 23
Shiny 20
Shanna 20
Ciderhead 20
Rossa 20
Barfly 20
Andrew 20
McGrath 20
TOTAL 163
I know it's been said already, but just bear in mind that with losses to hop soakage and trub (of which there will be plenty) we will each need to be targeting a volume greater than 20 litres in order to get 20 litres into the barrel.
Also, you could still brew a few extra litres to bottle separately as a "control". Might be nice to compare the barrel-aged porter against the original.
How as the 200L capacity magically dropped back to 160?
I thought 163 was the volume measured by Ciderhead last week....?
Has it officially been increased to 200?!? ??? ;D

These are potentially 200L Barrels :o :o :o
That was what I was referring to, a good few posts back in the main Cask thread.
I've just read that myself! So we're probably better off shooting for the 200 litre mark. If we've any left over I'm sure it won't go astray.
Some playing around with the figures needed so. I'm sorry to be taking liberties and changing people's contributions here, but we need to see how the big picture looks. If you want to amend your own figures up or down, just holler.

Defiantly better to have too much in case Lady Luck decides to kick someone in the nuts and they lose a batch. The extra can always be bottled passed around.

Hi there
Hope everybody is reading this. Suggested plan is to rack your beer to a secondary before delivery/collection to my place. Then leave all beers to sit for 4-7 days before meeting at my place to taste the beer and fill the barrel. How about delivery collection some time next week and meet the bank holiday weekend exact date and time to be vetoed by my wife :-)
Shanna
Sounds good. I'll probably rack to secondary fermenter at the weekend and I'll await instructions from Mrs Shanna. :)

Shamefully, I finally got around to bottling this at the weekend. The SMELL from the keg when I opened it was absolutely amazing. Hopefully it will be fully bottle-conditioned and ready to drink by Xmas.
I don't remember seeing much discussion on forum about how everyone packaged theirs - I know Rossa and Shanna kegged theirs, the mad sods. So how is it tasting after all this time??
Slight side topic; when are you guys doing the next barrel project? Would love to get in on that action :)
Too late, I'm afraid. Barrel is being retired after this one.
Should have taken the hobby up a year or two earlier I guess. No worries.
Not at all! Plenty of barrels still in service in the Dublin area. Although I think a lot of the barrels are currently being used for sour beers. I'm not sure if that's your bag. Have a look around the various club forums, all the details should be there.

Never say never :)
Would there be any interest do you reckon in doing a sour?
Shanna
Well, I'm interested! :)
Not too interested in doing a "regular" beer once again. I didn't think that there was enough oak character in our first barrel-aged beer, and we can expect even less in the barleywine. So you have to ask yourself what the benefit is in just holding the beer in a barrel for a year. However, a sour barrel would be too good an opportunity to pass by. Assuming your're willing to continue to host the barrel, of course..
I'll be honest - the prospect of handling sour beers is a little bit nerve-wracking. I've had over 4 lucky years, successfully keeping the bugs out of my brewery. You would want to be very comfortable with hosting a sour in your garage.

Don't be worried! Embrace the funk

I'll brew whatever as long as it's next year. Apart from a separate syphon and fv you don't have much to worry about.
I'm assuming you don't want to keep it in a keg or use beer lines with it either as it would infect everything?
Anyway, barrel project for me is the opportunity to try something different, so would love to contribute.
Ye I would love to give a sour a go too, if it were to go ahead.
Have we just nominated Shanna's shed to become our sour brewhouse?
I have visions of us buying assorted sour beers in the DH and collecting the dregs in a growler for subsequent pitching into the barrel. Not as mad as it sounds, especially if you're a reader of Michael Tonsmeire's blog.
This could get interesting... >:D

Haha! I was about to suggest collecting dregs too.. I'm growing up cantillon dregs at the mo. Plan is to make goudenband my Xmas drink and collect dregs from all the bottles.
I'm in for a sour definitely..
Nice one ciaran. Are you actually making a starter from the dregs? Is that just a regular DME wort?

Speaking of interesting, lets continue this conversation at the next South Dublin meet in the Dark Horse.

That's the plan. It's just a week in. I used liquid malt extract from the health shop. I'll check it later and see how it's getting on.

Just to show the cantillon dregs growing.. Not everyones cup of tea..:)
Not growing up the goudenband as I have found out it is pasteurised so no bugs no nourish.. Have to find something else I like that has live bugs.
Boon Oude Geuze Mariage Parfait has harvestable bugs apparently, but a bit more expensive.
At the moment I hope to make an Oud Buin. I'll hopefully make a batch using wlp bought sour mix. I plan to make an extra few litres and use the cantillon dregs shown above as an experiment.
On a side note, I brought the barrel stout to the recent Liffey meet. It was very well received, have to say I'm really happy with it. Just recently force carbed it and tried it for the first time myself.
Wow, how long did it take to get that pelicille. Can't be good for your stir bar!

Its probably a month old. I developed a pellicle the first week, but I poured a drop out to taste it and the pellicle dropped into it. Its only come back this week. I moved it to a warmer spot which really increased activity.
Not using a stir plate. I actually meant to look up if a stirplate helps grow up souring strains, but if the pellicle protects the beer, I assumed not. I'll research more.
Mmmmm... hairy...

That looks like there's a wasp in it? ???
Just a bubble.. Cross sectional view.
Had a bottle of the barrel porter this evening and it tastes fantastic! I reseeded with yeast and left it to bottle condition before xmas, but I obviously didn't leave it long enough as the first couple of bottles I opened were flat as a pancake. Had to take the crates back into the house for a few weeks to let them carbonate properly.
It's such an intense beer - massive coffee aroma with notes of oak and whiskey. Flavour is all chocolate, espresso, caramel and burnt toast. The oak really comes through too. Can't believe this turned out so well.
Big words I know, but I don't think there's a commercial barrel aged stout out there that could hold a candle to this.

You are not imagining it. The beer is incredible. A buddy of mine works for flying dog and couldn't believe homebrewers got together to make a barrel beer like that. Really is something special.

Connor what yeast did you use & how much was required to get it carbonated?
Shanna
Unfortunately I don't have a scales that has the required precision, but I used 1-2g grams of us-05, rehydrated first.
I'm hoping the rest of the bottles in the batch are carbonated too - if the rehydrated yeast didn't mix through the beer thoroughly, they'll be flat too.
2 bottles of imperial porter for the competition dropped into the DH this afternoon lads.
Lucky judges. That stuff is Yom!
Fair play!
Fingers crossed!
