Title: Safale s04 - fermentation times

Guys,
I have only done a few all grain batches yet and for each one I have used S-04 yeast.  Each time it has taken roughly 3 weeks to ferment out, is this normal for s-04.?
Prior to going all grain I had done a few coppers kits and they always finished after around 10 days.
I'm just talking about modest gravity beers between 1.040 and 1.050, a couple of ESB's and a Kilkenny clone.
I've been keeping the temp fairly regular between 20 & 22 degrees with a brewbelt.
Like the kits I've only sprinkled the yeast onto the wort, would it ferment out quicker if i re-hydrate first?

Hi Damien. When it comes to dry yeast, I know you can just sprinkle it on the wort but you would be a lot better off if you rehydrated the yeast first. This will give the yeast cells the best start at consuming the sugars in the wort.

It is also said that by skipping this step you could be damaging a lot of the cells since the cells can't yet regulate what passes through there membranes.

Your beer should be finished fermenting within 10 days to 2 weeks. If your struggling and it is taking upto 3 weeks, it could be that there aren't enough viable yeast cells or that fermentation has stalled.

I'm brewing right now but will be using s-05 this time, I'll try the re-hydration and see how it goes
