Ingredients:
2500 g Wheat Malt
2500 g Premium Pilsen Malt
20 g Saaz (3.8%) - added during boil, boiled 60 min
1 ea White Labs WLP300 Hefewizen Ale

Schedule:
Ambient Air: 21.11 °C
Source Water: 15.56 °C

Notes

No whirlfloc used

Fermentation
17C for 10 days

higher gives too much banana - lower too much clove - if you can only ferment at 20c then use WLP380.

This beer is best after about 2-3 weeks chilled - it does not hold well long term - 4 months max.

If you cant do a stepped mash - mash at 66 for 60 mins.

Might give this a go on Friday. Reckon I'd be ok to use cascade instead of saaz? I think a nice bit of grapefruit hop character could work in a Weiss anyway.

I'm doing a double brew day on Wednesday for Christmas and this is one of them. Did it before with citra and was nice.
You can never go wrong with a nice wheat beer.

Weizen isn't a hop forward style typically, but it's worth a shot.

Yeah but this is one of the things that annoys me about German beer. Apart from Schneider Weisse (and a few of the newer, smaller breweries) none of them ever deviate from the traditional parameters. I made a Citra Hopfenweisse with Rossa at TOG and it turned out quite well although a little too bitter for what I'm looking for this time (i.e. something to please the missus).

You might be better waiting to brew next month if it's for Christmas.

I'll need a fair amount for a thing next month so it's more for that im brewing. Never know might get a second batch on before Christmas.
Thinking about it now I'm sure I'll need a second batch for Christmas.

Just enjoying my first bottle of this now. Lovely brew. Only thing I would change is mashing slightly higher at 68c to give it a bit more body.
Can see why its a medal winner. Very nice.

Mines could do with more body as well but it's pretty quaffable. The cascade isn't very noticeable at all, probably would have needed more of it to make an impact.

I have been asked to do a Weiss for a party in August (can't stand the stuff myself the whole clove toothache thing I think) I am guessing a thinner beer is more appropriate for the summer so lower mash temp as per op?
