Turned out well but I made a mistake with my sparge quantities (chalk it down to hungover brewing). Ended up with 19L instead of 23L post boil. FG was 1.06. She's hefty. Used danstar munich. Hopefully it'll be up to the challenge. Lovely smell and texture off the wort.
Planning on bottling this saturday depending on grav reading but may leave it till monday if it needs more time.
Ya, safale us-05 would have been my first choice. I had the danstar munich as a backup for my previous all grain blonde ale. I figured if us-05 was good for the ale and the stout then the munich might be too. I fear I may have been wrong... Gonna use some washed us-05 for the next irish stout brew. It'll be my first time using a washed starter so fingers crossed. I've got a smack pack in the fridge as a backup. Highest gravity OG I've ever made. Lovely smell.
This yeast is for wheat beer as said because it will bring some estery aromas and a banana taste,should be interesting. GO FOR IT and f@*k the begrudgers :) you can enter it in the comp next year. :)
I have the ingredients for a second batch. I'll do the second by the book. Compare and contrast. ;D
Nottingham, is usually my preferred stout yeast, windsor finishes too high for me, especially as your mashing high for a stout,
I wouldn't worry too much about the original gravity, you'll have a lovely 6%is stout, cant go wrong!!!! :)
Brewed this again. Used nottingham this time and threw in 20g cascade mid boil (No scientific reason, I had cascade and wanted to see if there'd be much difference). Got my quantities right this time. Ended up with 22L @ 1.051 in the FV. I got a carboy and twas fairly full (aerating that was a workout). Krausten is going to destroy the place. Must use a blow off tube next time. Efficiency still at 60% though >:(
