Title: What mozzarella do you use on your pizza?

I have memories of the Bad Ass Cafe before they ruined it, when they had the overhead wire system for placing orders.

I also have memories of fantastic cheese on their pizzas, that was literally like chewing gum. Take a bite and you'd have cheese strings everywhere.

I know mozzarella is supposed to be made of buffalo milk, but I've kind of given up on that being the reason for it being so stringy, and am putting it down to just being a quality thing.

So where do you get your's? I've tried all the supermarket ones, and they're all a bit... meh.

I haven't done the proper survey yet but I find so far that good mozzarella doesn't cook well. Buffallo of just wasted. I got some cheap Italian stuff in Dunnes for 59c and they are pretty good.

I find that mozzarella goes rubbery when you cook it. I much prefer cheddar and a small bit of parmesan  :o
