Could someone please put a wiki together on grain, Have just moved up to AG i have little understanding of all the difference types of grain and their applications. Currently i buy a full kit from the HBC which are fine but i would like to know more about speciality grains and so on.

The best way to learn is to brew different styles using a book like Brewing Classic Styles while tasting the comercial versions of those styles you will soon get to know what you like

The suppliers' descriptions of the various malts is probably a good starting point. Also, this website has a nice summary of specialty grains:

have you got a copy of beersmith? good fo showing impact on abv and colour of different grain vols and appropriate %'s
