This is my first post on the site. I have been bewing for about 2 years now and have recently got into all grain brewing. I have brewed a few Pale Ales with American hops which i really like but am looking for a bit of advice on how to use New Zealand hops in a Pale Ale. I bought Rakau and Dr. Rudi so any advice how best to use them would be greatly appreciated. I'm looking to brew something in the region of 4.5% - 5% abv with some Marris Otter, Crystal and Carapils.
