Why the hop addition at 30 mins?
Call me irrational but I prefer to split hop additions, having one or two additions just doesn't look right to me.
1. I had the black malt there so thought I might as well use it up. Can't imagine it'll do much but it might add something very subtle.
2. Only yeast I had on me (cept for weizen) but regardless I've had a few lovely stouts made with it.
3. Choco malt was from whoever HBC uses. Never tried Bairds, will look out for it.
4. Wanted to get as clear wort as possible.

I think "floaty" bits can easily contribute to off flavours. Have noticed it in homebrews before, albeit, usually lighter ones.

I'd use finings in a stout too, sure why not, I think a nice see through opaque is nice... I need to brew a stout!
IG your right about them floaty bits adding flavour. Anyone who does not think so should get some and taste it :).

Currently bubbling away nicely with a lovely chocolaty malt smell coming off it anyway. :)
sounds good man, love to hear how it turns out. did my first all grain last week, a stout mash kit from homebrewcompany and it smelt great when i was racking to secondary with a feck load of sediment(forgot to add a bag for the grain and did the same this week when ordering an american pale ale) hope it goes well for you
