Have been a bit remiss on this topic.

I have been busy and have up comming family commitments that will take us to Manchester.

Could I ask Nigel to take the lead on this thread?

Assuming its a Barley wine can we confirm the recipe and sign on here:

That's not a problem. We will need to decide on an emptying date for the current cask and move fro there. The logistics need to be right.
If we go for something around 1.090 it's going to take a few weeks plus dry hopping so the guts of a month.

Well I was hoping to do a nice Weiss or an english mild

however - as long as its one of nigels epic ones - the Barley Wine is cool

but we will need to stick to that recipe -  The yeast could be critical -
I could do starters for people to ensure the yeast is the same and also save on money.

Have just got one of the big 8 kW gas boilers from up north, and have 50 and 100 L pots available - plus my electric kettle!

I reckon we go for dry yeast rather than liquid.
I've found Nottingham attenuated higher than Uso5.
On similar recipients uso5 went from roughly 1.090 down to 1.020 when Nottingham went down to 1.016

Been doing a bit of thinking today and I think Nottingham is the way to go for our cask. The oak sweetness would suit the lower FG rather than the 1.020 ish finish. Could end up a bit too syrupy.

Pitching 2 packets or the yeast cake from a previous brew is the way to go. Nice clean yeast that will drop nice and clear.

As far as recipe goes, dme or lme additions are the way to go to get the high OG. We could contact home brew west and try get a good price on the cans of lme they do. Would probably be looking at 2 cans each. A fair bit cheeper than the 3kg of dme from HBC.

For a big American barley wine we should be looking at an OG of around 1.090 and IBU of 100+
Magnum or Apollo would be my choice for the majority of the buttering. Hugh teens AA.

60 , 15 , 5 min additions plus a hefty dry hopping.
Would even consider dry hopping the actual cask for the last week or so. 

I don't have much experience with extract but I'm going to presume it highly fermentable. To compensate I'd say a fair amount of light crystal or carapils. Marris otter and amber for the rest of the grist.

I'll have a look at my notes over the best day or so and finalise  a recipe .

Do we need a quick GB on the LME from HomeBrewWest?

I'd need 2 tins for Nigels recipe!

Edit: So we need say 20 tins of LME ( We need at least 9 brews better 10 given the RIS experience where there were some losses )

For the core Swords/malahide community then this would be great but for others it might be better logistically if they order direct - What do we think?

Should we also do a GB on the Yeast (as recommended by P() and also the Hops?

Please do. Would be interested in all grain, but if will have to scale it up for bigger quantity may need to use some extract as well.

Count me in.  I'll go along with a group buy for two tins of extract, 2 sachets of yeast and 100g each of Magnum and Apollo whatever.  They'll all be used anyway.

Ok sorry for taking so long with this but have been busy the last few days.

I put ann the numbers into my brewing software and the 2 x 1.5 Kg of LME comes up short of the numbers compared to the more expensive DME  With the 3 Kg of LME we hit 1.079 compared to the 1.091 of the DME.
Before we go any further I would like to make sure people at ok going with the more expensive DME

It would be the €18.95 3kg bag from HBC

The recipe i would like to do is as follows.

Barrel Project No 2. Brewing Bad US Barleywine

OG based on 65% efficiency 1.061
IBU

Grain bill:

Marris Otter 4.75 Kg (54.3%)
Amber Malt 0.50 Kg (5.7%)
Crystal 80 0.50 Kg (5.7%
Light DME 3.00 Kg (34.3)

Hops additions:
Apollo 19.5 AA 35g @ 60 mins               ( 73.5 IBU)
Apollo 19.5 AA 35g @ 20 mins               ( 24.7 IBU)
Centennial 10.5 AA 35g @ 5 mins          ( 6.6 IBU)
Centennial 10.5 AA 40g @ dry

I would also suggest dry hopping the cask in the last few weeks before emptying with aprox 300g centennial / cascade pellets.

Yeast 2 x USo5  which should drop to aprox 1.020 which will give . 9.5% ABV end product.
Because of the large dry hopping of this beer we may need a bit more then the last batch for filling and top up so another brewer may be needed. If we have extra it always good to have a control sample.

What does everybody thing. Recipe ok for everyone. Any suggested changes. I chose apollo as the main bittering hop as ive had great results with in the past and would love to try it in a big US barleywine. Big tropical and orange / citrus taste. Lovely stuff that i thing will match the centennial perfectly.

For a full all grain batch with no added extract 11.75 Kg of marris otter would be subbed

I'm ok with the DME.
I can get more than 6kg into my mashtun, but the DME will give some margin of error for any loss of efficiency etc.

I was thinking of using LME and making up the difference with extra base malt. Definitely can take an extra kilo in the mash tun...

But if we were to go down the DME route, would we get a price break if we were to buy a 25kilo sack? But would it be extremely messy trying to split that out?

I don't think I have amber either.  It's not something I use regularly.
The HBC didn't have any centennial last time I placed an order either, so I have none of that that I can offer.
If I'm ordering amber, I can order some centennial as well.

Right I have the Amber for myself and Will. I suppose you could sub the amber with a low crystal and a bit of brown. aromatic malt may give similar results but if your gonna sub do a bit of research first.

Was just looking over my notes for a single hop pale ale with apollo and remembered how sticky these hops are. you could probably squeeze the oils out of the. I did a batch using 100 g to bitter to 100 IBU and remember it taking ages to clean my fingers after. Apollo is SO good.

I'm really looking forward to getting this into a big beer because it was on my to brew list before this project came up.

A Super High alpha variety with Citrus notes, emphasis on orange, resiny, spicy.
Use For: Any beer with a big hop profile, definitely all-American!

Update:

James is, as we speak packing the hop parcels

The LME and yeast should be with him tomorrow or at least by Monday.

I would like to propose a meet-up to dish out the ingredients. The Amber can either be ordered now or swapped for other malts as Nigel suggested.

In the scheme of things we need to get this brew on asap. I would suggest to meet either:

Next Tuesday (29 th)  (assuming LME/yeast is here)

or the Tuesday after ( Nov 5th )

If we brew now then we can fill the cask early in December and so still have 2 weeks say to bottle condition in time for Santa's visit! (Whos making the mince pies?) They who keg condition by force can relax!

If any one wants Prosecco bottles, Champagne and even a few Magnums of Champers let me know as I have some tucked away. Can always bung them in the boot for next meeting ( 12th November )

All this means I have to pop over to the Boro for to book (sadly will be honour bound to have a pint and a toasty)

Talking of the Boro:

They have just invested in a smoker. They now smoke meats for the Smiths group pubs. Had some Smoked Pork in Farringtons last Saturday and it was delicious. In case you missed the result the NCB (me) got the Bronze.

Secondly, they have discovered a tunnel from the Boro to a church or somewhere and there is some sort of crypt under the pub that they have opened up to Joe Prole (given the time of year!!)

May be worth a look withh the kids!

It is good to see things moving well on the new fill.
I put an order in for the grain Sun 20th it was Dispatched Wed 23rd should get tomorrow.
All going well I should have 500g of Amber Malt and 500g of Crystel 80 spare.

Are we talking about a second cask here?

Could we draw up a proposed rough timeline for this and the emptying of the Soyuz?
We're all going to have to make some time for this.  I'm on holidays next week so might be able to do some brewing???

Something like this:

Meet up for ingredients: 29th Oct
Brewing: By 10th Nov
Fermenting: 2 weeks?
Secondary: 2 weeks?
Filling Cask: 8th Dec
Conditioning: ???
Emptying 1st Cask: ???

Let me know if there's anything we're short of and I can order today.  Renier: I'll order a kilo of amber for us.  I might stick in 100g centennial as well.

I got my order today.
I have 500g of Amber Malt and 500g Crystal 80 Spare.
The problem  is I only got 5Kg of Maris Otter so I am short 750g.
Will Pale Ale Malt be ok or should I get more Maris Otter.

James is about to post up that we are short of one of the hops. Watch this thread!

I think its Centenial. If you have it bring it! If you need some then please bring a swap (70g or so)

Just in case you'll need some I found extra 1kg of amber and 220g of centenial, so in total have ~350g of it (13.5% AA).
Also can donate some crystal if anyone is in a need.
So, who want some hops/malt? :)

Btw. Noticed that it was 1000 post so going to 'celebrate' it with a glass of ...

Lol, my kitchen clock is still an hour ahead so ... :P
