Title: Doing a wheat beer with peach or pineapple

Anyone tried either?

Would pouring in a carton of peach or pineapple juice do the job?

I've not heard good things about pineapple, but peach ight be interesting.
Just remember that the sweetness from the juice will disappear.

Pineapple wheat beer is beautiful if done right. Santan brewery in chandler phoenix do a summer seasonal called mr pineapple which is excellent. Brought some home when I was there over the summer. Some colleagues of mine, guys who don't drink much craft beer, couldn't get enough of it. I actually promised to do a pineapple wheat beer and give them some. Hasn't happened yet but I might do it before Christmas. Did a little bit of research on it a while ago and apparently it's best done by adding pineapple juice late in fermentation
