Title: Anyone here have experience of making saurkraut?
Post by: Bzfeale80 on November 06, 2013, 11:43:48 AM
As a way of preserving garden produce from cabbage etc my mum is thinking of making saurkraut.
What type of container have people used for making it?

I've made it, but it's a waste of time in my opinion.
I used a big 3L glass candy jar.
shred the cabbage fairly fine, put in a bowl and add salt to draw out the water.
Pack it tight into the jar and add the brine.
The sugars in the tightly packed cabbage will ferment slowly under the brine
It takes a few months.

We've made it too and it was great!

We used this recipe without the apples and juniper berries.
