Title: Keeping the barrel for another 3 months?

Lads, a few of us had a taste of the barrel the other evening, and while the whiskey flavour has mellowed considerably, the oak still hasn't really come through.

There is no real sweetness either, unlike in Saruman's original recipe. I suppose his didn't get this long to dry out, as our's is now down to 1.006.

So how would people feel about delaying emptying till mid/end January?

It would probably also work better for the oud bruin, but that's secondary.

Thoughts?

Tube realises he had consumed far too much and needs time to collect enough Guinness cans to fill it up.  ;)

If it's end of Jan that would give me enough time to get the old bruin brewed too

I'm cool with keeping it in longer. I can't make it this weekend now anyway...
