Title: Lomo Saltado

It's Christmas so I'll share a favourite recipe.  I hear it works with turkey  :), and it's ok to improvise with chillis as well if you don't happen to have a wide variety of arcane Peruvian chillis just lying around.

It's basically a Peruvian stir fry with beef, red onion and tomato and the traditional Irish half'n'half. Also popular with fussy kids.

6 servings.

Ingredients
1 tsp minced garlic
2 tsp finely chopped aji limo
1 kg beef steak
500g red onions, sliced
500g plum tomatoes, sliced lengthways in sixths
1 kg large yellow potatoes, peeled and cut in sticks
3 ajies amarillos, sliced fine
6 tbsp soy sauce
2 tbsp chopped cilantro (coriander to you)
1 tsp ground cumin
Red wine vinegar (or pisco if you have it)
Salt / pepper
Oil

Prep everything in advance. Things like beans and aspargus work well in this recipe as well.

Boil some rice.

Cut meat in strips.

Get 2 woks.

Heat oil in wok 1 over medium heat and add garlic and aji limo for 2 minutes. Raise the heat, add meat and brown all over. Season with salt, freshly ground pepper and cumin.

At the same time, get wok 2 add more oil, stir fry onion until barely soft (1 minute). Season with salt and pepper, few drops of vinegar, or big splash of pisco (yay!) and continue until it has evaporated. The onion should still have some bite. Do it again with tomatoes in the same pan.

Remove meat from pan along with juices.

Mix the 2 woks together. Add aji amarillo and soy sauce and give it another 30 seconds. Add the chips and gently mixed it all. Garnish with coriander and server with white rice.

Any time I ever had this there was some peas or green beans as well.

Add (lots of) lime to taste.

What would you recommend to drink with it?

The obvious answer is red wine, but squeeze a bit of lime on it when serving and it'd go great with something pale and hoppy. Probably wouldn't have it with stout.

Went googling it and found this peruvian traditional sour maize beer called Chicha de Jora.
I might give it a try and when it's ready have it with this Lomo Saltado :)

I won't lie, mostly I had this, even with ceviche >:( which screams out for a nice hoppy lager. I was working.

Yeah, I had roast baby goat with chicha on it one time. Very nice. Dogfishhead did a chicha one time.

Last time I was down there though, I really liked the beers from Cerveceria Barbarian, their "red ale" had way more hops than most IPAs.
