You have 4 options.

St Mary's Abbey in Glencairn near Lismore, County Waterford, Ireland (Nuns)
Mellifont Abbey in Collon, Ireland (Monks)
Mount Melleray Abbey in Cappoquin, Ireland (Monks)
Mount St. Joseph Abbey in Roscrea, Ireland (Monks)

Given that the punch line of "Brew Like a Monk" is: if you want to brew like a monk - get someone else to do it, I don't think celibacy, poverty and all that should be much of a problem.
