Hey,
I'm going to have some free time at the end of the week so I plan on doing a Punk IPA Clone. If you guys have any feedback on the timing of the hop additions I'd appreciate it as theres so many different variations out there I dont know which to go with.
I'll be using 6kg Maris Otter and Safele US05 Yeast.
I've got 100grams each of Chinook, Ahtanum and Simcoe Pellet and 100grams of Nelson Sauvin leaf to play around with. I plan on dry hopping it too but am only concerned with the timing and weight of the hop additions at the moment.
Heres 2 suggestions I've come up with
15g. Chinook, 60 minutes
30g. Ahtanum, 15 minutes
15g. Nelson Sauvin, 15 minutes
15g Simcoe, 10 minutes
15g Chinook, Nelson Sauvin & Simcoe at 0min
or
2g Chinook – Boil 60.0 min
20g Chinook – Boil 30.0 min
10g Chinook – Boil 15.0 min
10g Nelson Sauvin – Boil 15.0 min
10g Simcoe – Boil 15.0 min
20g Ahtanum, Chinook, Nelson Sauvin and Simcoe – Boil 1.0 min
What do you guys reckon?
It'll be all about the dry hopping for punk.
Im tasting a bit of Cascade in there. Could be wrong.
From the brew dog website.
ABV:5.6%
OG:1053
IBU's:45
Malts:Marris Otter Extra Pale Malt
Hops:Chinook, Simcoe, Ahtanum, Nelson Sauvin
Twist:Hopped with bucket loads of our favourite hops
Thanks Lads . . . I put this brew on tonight and this is what I went with.
15g. Chinook,60 minutes
15g Nelson Sauvin and 30g Ahtanum, 15 minutes
15g Simcoe, 10 minutes
15g Anthum, Chinook, Nelson Sauvin & Simcoe, 0 mins
I plan on dry hopping the bejaysus out of it. I aim to let her go for 10 days then dry hop for 5 days after that.
I finished with 19litres at OG 1.056
I'm interested to hear how this goes for you. Wouldn't mind doing a Punk clone too, very popular with my friends and I quite like it too.
Maybe ye are way ahead of me here but rumour has it that Jaipur and Punk are variations on the same basic recipe (one of the Brewdoggers started in Thornbridge). I think there's a recipe for Jaipur in Mitch Steele's IPA book and without checking I'd say fishjam is on the right track.
I've drank a lot more punk than Jaipur but I always found Jaipur to be more floral and Punk more citrus fruit.
Not saying they are the same but one of the brewdogs (Dickie?) worked in Thornbridge and rumor has it Punk was originally a Jaipur knock off.
Just a suggestion, if you're looking for an angle to trying to dial a recipe in.
Punks changed since they started too. Used to be 6% ABV and much more bitter.
the lads were doing a live Q and A yesterday for the launch of their new beer mashtag 2014, i asked about the hopping for the beer and they said one bittering addition in the boil and then all whirpool additions, it was an imperial red ale but i assume the hoppy punk would follow the same protocol maybe give it a go and then boat loads of dry hopping
Cheers lads.
I'm leaving it to ferment for ten days then transfer to secondary and dry hop it there for 4 - 5 days. It's been bubbling away for nearly a week now and I keep having a sneaky sniff from the airlock everytime I walk by ... That's healthy, right???
I transferred to secondary tonight anf Dry Hopped with 30g each of Chinook, Simcoe, Ahtanum and Nelson Sauvin.
The smell in the house was amazing so I'm really looking forward to seeing how this brew will turn out.
Im going to bottle it on Friday night.
Thats a savage dry hop. Sounds like it'll be great.
How did it turn out in the end?
I just brewed this yesterday. Will be using the exact same dry hop schedule. I'll let you know how it turns out..
The endless homebrew issue. We post all the details of the pain we go through to make our beer and then never follow up with if it was a success or not.
It did ok in the Galway IPA comp, 30 out of 50 I think.
Main issues were with oxidisation mainly, the beer itself was well liked by the judges.
It was my 2nd AG Brew (I think) so there was still some teething issues. I will be trying this recipe again.
I enjoyed it - hoppy as f*ck
Can you remember what was your FG?
Not off hand, will have a look tonight
Thanks - would appreciate it.
Have been mashing lower recently and getting drier, thinner results - suits some other beers well (my Gamma Ray clone dropped from 1056 to 1011). Bit worried how this will turn out.
Wondering where you got the Nelson Sauvin? I've been looking to do this clone for a while but can't get that damn hop!

I think Brewdogs site has the OG and the ABV so you can work out the FG fairly handy.
Looks like for the old recipe (the 6%, 65 IBUs one which most of us will aspire to) the OG was 1053. This would mean the FG is 1008.
I mashed at 64degrees - will be interesting to see if I hit this.
By my calculations the current one (or the last one, I think they may have changed it again, anyway the 5.6% one) the FG is 1.013. To me that seems a lot more likely than 1.008, that seems like it'd be a bit too thin especially with just MO and a neutral yeast strain. Though my only real memories of the old Punk were that it was really, really bitter. Which a 65IBU beer would be if there were shit all dextrins to balance it.
Hard to know really - just checking again the 1053 seems to refer to new recipe only, cant find one for the 6% version. I have read that they mashed at 67 degrees though.
Seriously hoping I don't end up at 1008...still getting the hang of this mashing malarky.

That looks nowhere near hoppy enough for Punk, imo.
Its for the old 6% Punk which from what I remember of it was much more about bitterness than the current version thats more about the late hops.
I used a couple of methods with this that may not suit - FWH and also a 100 gramme hop stand at 75 celcius. Did a bit more reading last night and looks like I should have just done a regular 60 m boil with 10 grammes more to reach original IBUs. This will be closer to the new recipe (which wasnt what I was originally intending)..
Here was my recipe:

Brewdog and the Brooklyn Brew Shop have released an all-grain 1 gallon kit for £40. That price does include a demi-john, siphon and a few other bits. Still very expensive though. As someone else says in the comments, you'd get the same amount of Punk for the same price in one of their bars. https://www.brewdog.com/lowdown/blog/punk-ipa-beerkits
