What you guys brewing at the minute?
I've just bottled a Sarah Hughes Dark Ruby Mild, 7% abv which I hope to be able to share at the next club meet.
Looking into brewing a White Ale next time. Anyone got a good recipe?
Currently in the middle of an extract version of a Goose Island IPA clone from Mitch Steele's IPA book. It's spent 3 days now in the ferment-a-tron 5000 and is smelling great so far. Planning to have a crack at a 1 gallon Basic Brewing Video inspired all grain stout later in the week and hopefully tweak it a few times over the next few months for an eventual large batch. Also planning a hefeweizen for oktoberfest time of year
Have nothing brewing but bought the ingredients for a brewdog punk clone. Was meant to brew it this weekend to test my new set-up but bought the wrong solid state relay to power my heating controller/element(im not a spark) so another wait for the finest Chinese electrics off ebay :o :o :o :o :o
I'm on my annual brewing holiday! Can't trust the weather.
Having said that, I've 100l of red ale to get through, so I will be
hardly be running dry!
I'm currently relaxing in sunny Cork, but have a Falconer's Flight 7c's single hop fermenting in the brewfridge back home.
Since the place we're staying is pretty much a craft beer free zone I've brought my own portable bar with me I.e keg, tap, co2 cylinder and keg of regular Falconers flight pale. The missus packed pointless stuff like food and clothes ::)
Btw, big thanks to Matthew for both bags of FF hops :) Much appreciated.

Hello to the Belfast section - from a new member from Ballymena.
I've got a Bavarian weizen (Erdinger clone recipe) on the go since Sunday, currently sitting happy in the Big Brew Fridge and just starting to emit some lovely banana odours.

I bottled my american ale, I also have a brown ale in the secondary clearing - I should be bottling hat soon.
I also bought Graham Wheelers 3rd edition Brew your own british ale so going to try the Timothy Taylor Landlord recipe.

hi Andy,
I brewed a Tim Taylor Landlord a few weeks ago - check the AA% of your Styrian Goldings, as the ones currently on the market are really down on AA (like 1% rather than 3.5-4%). I didn't spot this till brew day so ended up having to use just EKG as bittering hops, with the Styrians (Bobek in my case) for later in the boil. It's come out OK, but the hoppiness isn't quite right.
Oh, and thanks for pointing me in the direction of this forum :-)
A fellow Ballymena man here (although I've now been living out of it longer than I was living in it).
Get the right yeast too. I think Yorkshire square is the one they
use. Someone will know.

Great to see you found the forum ok.
I will check the alpha acid before I brew and use GW's equation to adjust the hop weights.
Does anyone know if TTL is bottled and is it bottle conditioned?

It's bottled but not bottle conditioned. It's also available on draught in Leeds where I am right now ;-)
It's got the easiest label to soak off of any beer I know, so buy a few samples and reuse the bottles.
I was just across in GB this week and the B&B has TTL on tap - however much to my disappointment it was out while i was there.
TTL is sold in SuperValu. My clones have all missed the mark badly so far

Yes Chris - its just I was never very good at languages!
I have some sweet orange peel, coriander and stuff and wanted to use them up.....................however, I was in The Errigle last night for a pint of Dogfish Head Charles Wells DNA New World IPA.......which was amazing!.....so I'm back in IPA mode, and as I finished my Jaipur clone, I think the Witbier can wait!
And here's me thinking I was on my own in Ballymena. Representing the Seven Towers lads.
Just back from Lanzarote (drinking pish....then rum til it was coming out my ears) to find my Better Half Black ready for the fridge. Tester tonight to see if it's any good. I am finding that my abv is lower than expected...think I'm trying to get too much final wort.
Ah nice one Andy! I've not tried that IPA yet - will have to keep a lookout for it.
For the Witbier I dunno if you've seen the Jamil Zainasheff Brew Your Own online articles - I always find them pretty useful for building recipes:

45 bottles of the Erdinger clone are now sitting in the store room to condition :)
I hate bottling. Well, I don't mind the bottling part, it's the washing and sterilizing part I dislike....
Can you post the recipe for that Erdinger clone? I've been finding it impossible to get a close recipe for it!

I slightly wary of posting someone else's recipe, but it's freely available on the internet. I'll go ask him if he minds - in the mean time, search on one of the UK forums for Aleman's Erdinger Clone ;-)
It's the second time I've made it, the first one was probably the best beer I've made - this one's not quite ready for sampling yet but I'll be back to tell all when it is.

2 weeks warm conditioning +1 in the fridge and it's well carbonated and good to drink.
I need to get a proper weissbier glass, it doesn't look right in my ESB goblet ;D
Getting ready to bottle up my latest IPA, so took some time-out to order up ingredients for a Winter Porter.
I was thinking of adding in some Star Anise, to add a hint of liquorice.
Anyone tried this before, or have a clue - how much to add and when? Was thinking of 10-20g towards the end of the boil, or at flame-out. I brew 50L.

I put 1tsp of crushed whole anise in 20L recently and can taste a hint of it.

I crushed it in a mortar and pestle and added at 15 and 1 minute from the end.
Actually the full recipe is up in the extract section, so I'll double check the amounts.

Turns out it was 1/2 tsp for 20L. Mostly I taste the cinammon in this one, so you could probably add a little more, but it's very strong stuff.
Sorry again for being scarcely present over the summer. With 5 infections* in a row (115L of vinegar = no desire to make beer) brewing took a bit of a back seat. Not to mentions buying a house and a baby now on the way ???
But finally getting back on that brew horse. Got a bastardisation of an English Strong Bitter on the go on Friday. Just MO, whatever left-over crystal was lying around and some wheat. Cluster and Fuggles to hop. Saison planned for over the winter.
* Infections strictly beer related and not of a personal nature *ahem* :P

Made a standard English bitter using the cluster you gave me and bobek. Turned out quite tasty! What yeast do you use for your saison's? Tried Wyeast 3724 recently at 27oC, racked it last week and it tasted a bit fusely...

Glad the beer turned out okay with that Cluster.
Yeast strain was White Labs 565. It worked really well and I'd definitely use it again. We graduated the temp on it. Started at 20C and knocked it up a few C each week until we hit 28/29C for the last week (5 weeks total). If memory serves it was also really fusely at one point but the yeast re-metabolised the fusel alcohols during bottle conditioning (for at least 4 weeks. Best bottles were around the 12week+ mark).
Looking forward to hearing how yours goes.
I remember we thought ours was a goner then being really surprised by the results. I've seen some people suggesting pitching champagne yeast for the last few days of primary to fully attenuate and eat up any nasties but we didn't use it and it turned out great.
Recipe below if anyone is interested. Though I think it is for a 60L batch so measurements will need to be adjusted) ;D
10.8 kg Pilsner malt
1.2 kg Caramel malt
300 grams Saaz hops
2 vials of Saision Yeast WLP 565
Perimeters
80min mash (63C)
90min boil (100C)
300grams of Saaz hops, 1) 82 grams in @ 45 min, 2) 95 grams in @ 15 min, 3) 123 grams in @ 0 min
