Anyone know where to get them?
Or will I need to settle for flaked maize?

Polenta is very similar. Doing a Miller clone? :)

Flakes maize might be your best bet as grits/Polenta is going to need a  cereal mash to gelatinized  the starch, also i read some where that grits/Polenta  can oxidize

hoppy: Polenta eh? It was originally a Shiner Bock clone, but nowhere seems to have the right hops or yeast, so it's becoming a bit of a bastard mix-n-match.

oblivious: #cereal mash is no bother, and everything will oxidize if treated badly.
