The fine folks at Omega Yeast Labs submitted their Brett Trois sample for DNA sequencing (in theory to prove that it was Bret Trois, but possibly to see if they had a unique strain that they could patent as this is their business model) and they found: SURPRISE: Brett Trois isn't actually a Brett strain, it's just a really fruity Saccromyces strain.
Start mentally categorizing it in the general "Farmhouse" category now as it's official: It's NOT a Brett strain!

Does it still need a big starter?
I feel like I've just been told about Santa again. Luckily I bought 2 other Brett strains today to take the edge off.

It's ok Rossa, if you are a good boy and treat your Brett Trois well, Brett Santa will still bring you delicious beer. ;-)
