Following on from a great evening with Keith Villa last year, our second little talk is from Cicerone founder Ray Daniels - An Author, Founder of Cicerone certification program, Educator, Beer Judge, Home Brewer turned pro. It should be a very interesting evening.

Ray Daniels is the founder and director of the Cicerone Certification Program—the standard for beer sommeliers—and a member of the Senior Faculty of the Siebel Institute of Technology, America's oldest brewing school. He is a veteran beer educator and promoter that has traveled to more than 30 different countries in search of great beer.
Daniels learned to homebrew in 1989, initiating his transformation from beer drinker to beer expert. He soon demonstrated his brewing aptitude, winning awards at the National Homebrew Competition and twice earning the title of Midwest Homebrewer of the Year. Soon he was writing and speaking about beer for a wide range of audiences from Ohio to Osaka and putting his managerial talents to work organizing competitions, tastings and festivals designed to introduce consumers to the flavors of great beer.
Ray is the author, editor or publisher of more than two dozen books on beer and brewing. Examples include his own Designing Great Beers (Brewers Publications, 1998), a classic of U.S. brewing literature; and the deliciously presented Best of American Beer and Food (Brewers Publications, 1997), which he published while serving as director of Brewers Publications. Other titles have covered specialties like smoked beer and farmhouse ales; monastic brewing and the art of English pub tending.
In 1998, Ray was named Beer Writer of the Year by the North American Guild of Beer Writers. Ray became certified as a beer judge in 1992 and has since accumulated thousands of beers worth of judging experience. He was first invited to judge professionally at the 1996 Great American Beer Festival and soon after at the World Beer Cup. In addition to judging and organizing competitions, he has trained consumers, servers and brewers in beer appreciation.

Great night tonight. Some very insightful information and great to take apart the beer that was served (cheesy, aye). Great to get some nose bag as well. Thanks to Galway bay for hosting. My only criticisms are he took a long time to get around to talking about the shit i wanted to hear i.e. brewing and his insights into it. And he avoided answering the question about how if Ireland is like the US in the 90's with the boom of breweries popping up has a bust coming. Personally i think it has as i don't rate a lot of the beers coming out.
I look forward to the next one.

Wasn't referring to you John, you made it clear about what your status was in fairness. There are nearly 40 on the list, 20 turned up. Its common decency, we waited for people to arrive etc.. Its very simple, if you are going to attend, put your name down do so, otherwise, do not. Agree on the charges, there shoundn't be although there seems to be a need for a financianal incenteve to make people go to these things...

My bad from my side, I was hoping to even go for the couple of hour but have had a bit going on. Moving house next week (which only came about after I signed my name down) and the weekend turned out to be very busy packing etc. . which I thought wouldn't have taken as long.. Also wouldn't have went down well if I told herself, "Just off to the pub"

I like his reminder about yeast pitching. As so many things are going on at brew day with trying to get all the numbers right and liquid quantities correct brewers often forget to do some maths on the amount of yeast cells that are in 1 packet of yeast and so underpitch :o.

All his points on yeast were very interesting, especially the stress he put on how profound effect it has on your beer. I also found it interesting he also said to go to secondary once initial fermentation is finished, quite forcefully. There's so many varying opinions on how to do things online that it's nice to get some tips from a respected, reputable source.
Def. going to make a few process changes as a result of the talk and he was a lovely man to talk with to boot.
He gave some really good advice on making starters but I thought his advice to only use yeast from secondary to be a little off the mark. The standard advice is to use the yeast in primary because it contains a good mix of flocculent and non-flocculent yeast. Obviously you have the issue of washing this yeast to get rid of trub but I'd rather do this than limit my re-pitch to yeast that is still in suspension after primary. Interesting discussion though!

To get people committed in the future, I wouldn't be adverse to a reasonable cover charge of ~€5, certainly would cover the finger food & glass/pint of beer and you're more likely to get attendance.
I couldn't make the Sunday (family time) but I met with Ray on Monday. He went through the whole cert program and then 4 of us went off to the 108 and chatted further. I don't know if Ray mentioned it but it looks like he will be back July/August (the next time a Brewdog exam is due) and is prepared run another exam here if there are numbers. I was going to see if anyone was interested in a study group, we get together once a month and go over the course materials.

Was the food and drink not put on by the bar?
Club paid for the beer.
Food was supplied.
20 attendees (& Ray) x 7 pints Of Foam And Fury & a case of Cantillon in a party bag = €€€ loads
€60 in total. This was a very good opportunity to have a speaker as accomplished as Ray Daniels and the beers were picked so he could do a talk about what we were tasting.
