Good to put faces to usernames this evening, I would've loved to stay and taste the beers. Thanks to will and pat for bringing the hops/grain.
Another great night. The standard of beers was very high. The north county does make some great beers.
The wheat beers James brought along were all spot on and my pick of the night.
Any reports on simons columbus smash? Im thinking of doing the same as my next brew. ive only used columbus for bittering in a mostly citra ipa that turned out very well. Just wondering what its like used all the way?

A revelation was the Quadraphenia! Only been in the cask for 9 weeks or so and is already tasting superb. I will re-kindle the Quad thread as we need to decide a way forward.

Ha! It got a blast of constructive criticism :)
Was judged to have a some bubblegum esters. I like it and the wife (better taste buds) is draining the keg so can't be all bad.

No one said that it was bad :) Simply wasn't expecting that ester in beer fermented with US05.
That could be caused by too high fermentation temperature, wild yeast, underpitching or low oxygen levels.
Is great to get some feedback and not just flaccid compliments.
Other issues might be :
I'm trying no-chill using cornies - ambient air (wild yeast like you said) could be getting sucked in as the wort cools and creates a vacuum. Cornies are designed for high pressure rather than low pressure. I'm going to give the no-chill a break for another reason. I think my late hops are getting bittered by being held at high temps for longer.
Changes in fermentation temp from heated (~18c) during the day to too cool (~14c) at night. Definitely saw a big creamy head of kraeusen on that beer disappearing dramatically over night. I've now made little lagging jackets for my fermenters using carpet underlay :)
Don't think that no chill got anything to do with esters. Question is what are you doing with it later?
Do you aerate it before adding yeast? Temp. jumps in that range shouldn't do much harm imho.
When transferring it into the carboy I let it fall from the height of the carboy and then when it's all transferred I give the carboy a good shake for 30 seconds or though. Would that normally be enough?
That should be enough.
