Title: 90 min. vs 60min. boil with BIAB
Post by: revel_and_chaff on March 20, 2015, 09:24:32 AM
Hi all,

I've been reading up on the advantages of a 90min. boil as opposed to a 60min. boil. Just wondering which option BIAB brewers on here opt for?

All the best,

Ian

I don't think there's anything specific about BIAB in relation to the boil time.
Longer boil is supposed to ward off DMS precursor in Pilsner and under modified grain.
Or you want to reduce / concentrate your wort
Or you want to take on on some caramelisation

I have only done 60 min boils.. the only thing i vary with biab is the mash time i.e. either 60 or 90 min and maybe a step mash at a higher temp for an additionsl 10 or 15 mins.

Surprised to see so many 90 min responses.  For OP wondering which is most common, I hope I won't get shot down for saying it's almost always 60 min.  Afaik the only time you'd want longer is for lager type malts or high gravity beers.
