The Aussie Blend 7 day Pinot Grigio kit seems to have attracted a reputation as being surprisingly good quality for low - mid priced kit although, as far as I can see, most of the enthusiasm seems to have originated from the distributor, initially at least. Anyway, I put this kit on recently as my wife loves white wine. I don't generally drink it myself so I wasn't too pushed about getting a 'high quality' kit.

The kit was easy to set up; essentially just add water and yeast to the contents of a jerry can. OG was only 1.07, meaning it would struggle to reach 10% alcohol. Fermentation indeed proceeded quickly, although I added a foil 'space blanket' to raise the temp at times as the kit asks for temps higher than room temp - in Ireland in Spring at least. Fermentation was all but finished by Day 5, with a gravity of 0.997, which only dropped 2 points over a number of days after that.

And here we came to the big problem - clearing. This was my first large wine kit so it's possible I didn't degas enough (I gave it half an hour of paddling back and forth using a drill) but clearing took an absolute AGE, as compared to the day or two the instructions state. Several rackings did little to help matters and eventually I added a pack of Young's finings and things were clear a week later. Racked off again and added to bottles only to find that some sediment had still transferred meaning the wine doesn't look the best.

Tastewise, the wife likes it - but I think it's very watery and inspid tasting. Alcohol only 9.84% so not much kick either. Overall, this blocked my fermenter for over a month (seven days my arse) and left me with relatively poor wine (the small Young's Chardonnay kit I did previously was much nicer) so I won't be doing it again. Surprising really, as I've seen other posters here praising the result. Maybe I got a duff batch?

I made this kit (also for my wife it seems, though I would have drank some if it lasted longer). Mine cleared well, in that it wasnt cloudy, but there were some particles floating around the bottle after first pour. I guess I should just decant the whole bottle in future. I'm not sure if you could call this sediment since it seemed to prefer to be suspended in the wine.

Anyhow, as I said my wife loved it, although she claimed it was low in alcohol (I never measured FG). I guess that's why she drank it like it was water. I found it very drinkable, but not really a heavy hitter in terms of zest or fruit. It was nice and dry though and in that sense made a decent table wine. It was my first white wine kit, so will have to try the Youngs Chardonnay to compare it to. I'm putting on a Magnum Ultimate Pinot Grigio next.
