S-23 bready flavour

Oh Crap

I have a lager in primary for 2 weeks now, it is near it target of 1.008 (1.010 today) but I tasted the sample and got a bready flavour in the background.... It's been fermenting @ 11c for 75% then raised to 16 for a  4 day d-rest. Back to 11c now and waiting to rack and lager. I've never got that taste before, I used 2 pks s-23 rehydrated and treated nicely so I'm hoping it will dissipate and leave me my nice clean lager...I was planning on racking after 3 weeks,  Any ideas on the taste?

1 is good, 2 is better, 3 is enough & 4 isn't half enough

Bready smell is probably yeast. Get it to a secondary. It should be fine

Why did you drop back to 11C after the d-rest before secondary? Seems unnecessary to me

Tis unnecessary alright, I thought it had finished fermenting and was getting ready to transfer to secondary and begin reducing temp to 1 for Lagering.... Will shift it tomorrow
