I'm still very early into my mead-making career, but I'm doing a bit of reading up at the moment and thought it would be a good idea to compile a directory of mead resources. If you have any good links or other recommendations, just comment below and I'll update the above post.

LukeH

Thats fantastic thanks.

I've done two mead batches now - one just with plain lidl mead and also the Joes Ancient Orange mead recipe from Homebrewtalk.com - Both were okay but I reckon big improvements can be made.. I would also like to make a sparkling ginger mead someday too.

Looking forward to checking out the links.

Bubbles

Cheers Luke.

I'd love to do a sparkling ginger mead myself, but I've read a lot of comments about the perils of bottle conditioning meads. Apparently over the course of the long aging period that most meads require, the yeast can wake up and start fermenting residual sugars, resulting in bottle bombs. It is recommended that you use something like a Champagne yeast if you're bottle conditioning mead as the more popular mead yeasts (71B, EC118) get a bit funky after long aging in the bottle.

Excellent research

@Mods: Please sticky this!

Thanks Will! Already stickied by Garry! :)

I made this back in December and it tastes pretty fine. I've a couple of bottles I'm hanging on to for next Christmas.

In Poland, mead is also a great excuse to get out of doing important things. Apparently, Polish Prince Leszek I the White explained to the Pope that Polish knights could not participate in the Crusades because there was no mead in Palestine. While this sounds like a totally acceptable answer to us, we don't recommend using this excuse on your boss. Its significance in history goes even deeper: the English word "honeymoon" is rumored to come from mead; it was the practice of the bride's father providing her with enough mead for a month-long celebration. Now that's a sweet wedding!
