How low can you go?

Overbuilt a starter of WLP023 (Burton Ale Yeast) last week. Pitched half into an English pale ale, and kept the overbuild in vials in the fridge for later use. To my surprise this morning I found that the vials were overflowing and there was a nice healthy krausen on top of each. There were obviously residual sugars in the starter wort I'd stored the yeast in, and they seemed happy enough to chomp through it and keep fermenting at 4oC.

I'm impressed, I thought it was only lager yeast that could hack cold temps, and that ale yeast would go for a long sleep ... who knew  :D

Same happened with my overbuild vials. Just hoping they don't get infected from all the opening and degassing I had to do!
