Hi Guys,

Just getting back into it after a couple of weeks break. White labs are ordered, arrive early the week after next all going well. Ill sort the pale chocolate also.

After a lot of checking it looks like no HB shops here or in UK have any stock of either Muntons or Youngs. This is serious :(

Take a 5 gallon red wine kit add 1 extra kilo of sugar (so either 5 kgs if using a cheap tin or just 1 if using a no sugar kit) and a can of a country wine (don't add the flavour sachets at this time) Aim for an OG of around 1.120 or so. Pitch with Alcotec 22% high alcohol yeast. Ferment for a few weeks then check gravity. Probably be below 1.000 Add a tin or two of country wine kits. Ferment and check. You are aiming for the magic "22" tha'ts 22% ABV and a FG of 1.022 (same as commercial port) Add the flavour packs and wait a month and thats it.
Typical flavours I use would be: Blackberry, Black Cherry and Elderberry

Takes about 3 months, a lot of ingredients but you have just made 450 yoyos of port!!

Any chance of getting some of the larger sized bottles of isomerism hop extract in. Have been using it for all my bittering but the 30ml bottles don't last long brewing hefty IPA's.
