step mash

ok im planing making a dunkelwissen mash kit but have no idea of step mashing , im useing a peco boiler with temp controle

in a normal hefe, I've tried 43 degrees at 10 mins for a ferulic acid rest (more clovey)
then if you want, 15-20 mins at 50 degrees for a protein rest.
then 64-66 for 60 mins to get the sugars converted, then a good long boil (i've done 90 mins) to get rid of those nasty dms flavours...

not sure if this applies as well to dunkel though, the extra malts might mess with the traditional banana/clove smells?
