Edinburgh - Recommendations

I'm heading over to Edinburgh for a weekend in January with herself.
We're staying in the Old Town.

Does anybody have any good pubs/restaurants/breweries they can recommend worth a visit?

The Hanging Bat. No need to go anywhere else. If you do decide to go somewhere else (this is a mistake), there's a couple of brewdogs, don't remember which is which but one was decent, the other is shite (poor atmosphere, bad layout, not very comfortable in general). Bramble is a superb cocktail bar as well.

I've a stag in Edinburgh in February too, been before but only got a few pubs in so will keep an eye on any recommendations. BrewDog Cowgate is decent enough but it is quite small (not sure which one KDeath is referring to). 

The Scotch Whisky Experience was a good way to spend a bit of time too but the price seems to have jumped up quite a bit since I was there. (includes a free Glencairn glass though) https://www.scotchwhiskyexperience.co.uk

Hanging bat had great selection, but hipster central, Cloisters near by had a great selection too, I woul recommend Holyrood 9a if even just for the pulled beef roll in the smokehouse accross the road(bar had a heap of taps, smokehouse had interesting bottles too)try and track down Platform C, great Ipa

The hanging bat does have a great selection but it's crowded and hard to get a seat.
Brewdog have some great guest beers on, they had Alesmith Speedway Stout a few weeks ago when I was in.
The Jolly Judge off the royal mile is a nice little place with some cracking bottles on offer. They had Westy xii and Abbaye des Rocs when I was in plus a few decent cask ales.
Everyone has to believe in something, I believe I'll have another drink...

I am just back from Edinburgh was over there for 2 nights with my sister. However she is not a beer peson or even an alcohol one, so didnt get in too many puubs! There are lots of quirky characterful pubs on the Royal Mile. I'd say you will find nice cask ales around. I was in Wetherspoons for the end of their Real Ale Festival as well.
Last time I was in Edinburgh with Brendan I did go in to the Hanging Bat as Andy Q says it is Hipster Central, but I went early afternoon so was ok to get a table ect.

Thanks for the replies and the recommendations folks, much appreciated.
The hanging bat seems to be a popular enough spot we'll make sure to give there a visit anyway.

I've also been recommended a nice steakhouse too - www.chophousesteak.co.uk I'll be giving that a go too.

Nipped into The Abbotsford to escape a heavy downpour the last time I was in Edinburgh.  It was top class for cask ales.

I always make a point of heading to Holyrood 9a. They've 20-something taps, constantly changing. Decent food in there too.
