The only thing putting me off no chill is the timing of late hop additions. The aussies seem to have great success with it

You could use hop bags and pull them before chilling.

The hop oils would still be exposed to hot wort for much longer than a late addition

To get the results you calculate with brewing software you need to invest in brewing hardware.
Simple. You get what you pay for. No proper chill. No proper results.
