;D I know the feeling!

Try the Coopers English Bitter with the recommended 500g of spraymalt. It's low ABV so it'll condition really quickly. You could have it ready within 4 weeks and tasting even better in 6. If you wanted to get creative and improve the flavour, do a hop tea of East Kent goldings (or Cascade, to turn it into an American Bitter), or do a small dry hop, or steep a little crystal malt and add to the kit.

This batch is under way.
How should i finish it out.i.e. Priming   Storage (temp)?

Thanks

Prime using corn sugar (or table sugar if you don't have any) and let it sit for a 1-2 weeks at normal fermentation temperatures. (Use an online calculator for working out your priming rate.) Then cold-condition it by sticking it out in the shed, or put the bottles in the fridge.

Did you do the english bitter?

phelixoflaherty

Not yet.that will be the first one next year

Just put this lady in secondary.
It tastes like a weize but lacking sweetness.
Will priming with ordinary sugar take care of this or could I use a specific priming ingredient?    Plan to bottle it next weekend.

I like sweeter beer or at least I used to until I started into  this malarky

I just checked my records 8) & Young's American Saison kit which i stuck on the 21st of last month & after 3 weeks of primary & 1 of "conditioning" (fizzing up). Is extremely drinkable which is surprising especially for the strength of it. Have had 2 bottles for as they say QC purposes & the only issue is a tiny sugar twang which i know will fade in a couple of weeks. All the dry hops etc do a great job of covering it up i'd say ;)
OOP just realised OP was 2 weeks ago....
