What are the differences between the different kinds of palt malt out there, e.g. in what ways does MCI malt differ from Minch or Maris Otter?  Also what numbers do we need to know about to add a new brand of pale malt such as MCI's into beersmith?

Is there a point at which rinsing more sugars from the grist in a mash risks extracting tannins even if the pH and temperature are in the right range? Or to put it another way, can your mash efficiency be too high?
