So this is the first wine kit I've ever done so it's all new to me. I put this on yesterday and the kit recommended a temp range of 20-25 for EC-1118 so I set my heat-belt system to 22C. I came down this morning and it was bubbling away nicely but something struck me and I decided to google recommended temps for white wine and I discovered that 22C is well above the recommended temp. I've since turned my heatbelt off and it's slowly dropping but I expect I did some damage.

Just wondering why the kit would recommend this? EC-1118 will go to 15C so why don't they recommend something lower? Has anyone any experience with this? I reckon it will be grand and hopefully some aging and carbonation will mask on unexpected flavours.

EC-1118 has an optimal temperature range of about 20-25 degrees at which it is most efficient. If you go a bit below this temperature it may ferment more slowly but it should be fine - unless you go too low which may cause the ferment to stall. If you go too high above this temperature (which is unlikely in this country!) it could start to stress the yeast which may produce some off flavours and ultimately kill it.

From my experience, wine yeasts are far more robust and easy to deal with than beer yeasts and EC-1118 is one of the strongest - it's the yeast you call in when other yeasts have failed. Wine yeasts can cause off flavours when they get stressed from lack of nutrients, reaching their alcohol limit or from sitting on gross sediment for too long, but it's a lot harder to screw up than with beer yeasts.
