thats some serious post!
Stupid question can advise what was duration of the rest time you set at the second stage that it wouldn't hold for try longer that a minute  ?
Is your code current, try a  a reinstall as clearly it is working at 30.
Try skipping the first 30 degree step and do a 66 degree and hold for 20 mins and onto 68 hold for 20 and 75 and hold for 20.

After further prodding online, I came accross this informative article.

Bleeder Resistance

It basically says that if too there is a high enough current is being stored in the SSR which cannot discharge effectively, the leakage current from this is enough to trick the SSR to thinking that this current is coming from the input side thus leaving the SSR on. It calls for a "bleeder resistor" to drop the current to a lower level.

When I opened the project box to examine this, I did notice that there was no reaction to the SSR when it was on or off. The red light would come on and off accordingly but the SSR remained fully open. Pulling the kettle cord, thus disharging the SSR for a few seconds, allowed it to work again. I'll try and find a 10K 3/5 watt resistor and put it between Live and neutral after my SSR output.
I looked at the ArdBir schematic and they use a transistor and diode to bump up the voltage on the + trigger and keep V- at 0.

It's a much entertaining/frustrating troubleshooting process although I'd rather be making beer than fixing electronics! If I solve this problem then hopefully it will be helpful to other members out there who migh encounter this issue.
