Aging question

Hey everyone,

I have a 7.5% coffee and oatmeal stout sitting on oak chips for around 7 days. Tasted it last night and I am sure its where I want it and Im going to bottle it later today.

Have any of you suggestions on how long to age it? It will be bottle conditioned but I will rack it onto a priming solution of table sugar first to have an even carbonation.

Should carbonate in a couple of weeks. How long you age it beyond that is down to taste.

At a minimum, leave it 1 week for every 10 specific gravity points, e.g. 6 weeks for 1.060. Taste a bottle, leave another 2 or 4 weeks before trying another, depending on how patient you are. That style just gets better and better with age, so patience is key.
