How do you sparge?

I heated up a second pot with ~76C water and I changed my brew bag from mash pot to this sparge pot. Then I stir the grains a little bit inside the bag and I left the bag into the sparge pot for about 10 minutes.  After that I poured my first wort to this sparge pot and started boiling phase.

How do you measure how much water to use in mashing and how much in sparging? I made a 2 gallon batch with 2.3kg grains.
My sparging is pretty much the same as yours. I use about 2.5 to 3 liters per kg of grain in the mash and the rest of the water in the sparge.

I put my mashing pot to oven so it keeps it's temperature better. Should I take the pot away once in a while and stir the grains or just leave it alone for whole mashing time?  Is 90min mashing time a lot better or is 60min enough? I read somewhere that you might get ~5% more effiency if you mash 90min.

Same thing goes for sparging, should I stir the grains once in a while?
