Danstar munich yeast / step mash

You can do a great weissbier without doing a step mash but I would make sure to mash at the high end 68ish as it wants to have loads of body. I screwed up a weissbier mash and it came out too thin, tasy but thin. Dont know about the yeat though. A lot of the Weissbier character comes form the yeast so Id choose an appropriate strain

Yep, the step mash was really about trying to make up for the yeast's shortcomings (and also about playing with my boiler). The yeast manufacturer's recommend it. I don't think it added too much and I would not use this yeast to make a weiss again. Mind I was happy enough with the beer as it had plenty of smoke character
