It's tripe, genius done Chinese style in a kinda sweet chilli sauce. The Chinese shop behind the Jervis Luas stop does it. Tastes like butter.

fire it into a curry...my dad ( who actually eats it regularly) does nice spicy curry on day 2 of it...

ok in the curry but with onions,  potatoes, drisheen and white sauce = manky

Do you think that would work with fresh (if that's the word) tripe?

mmmmm tripes ;D You have to try tripe soup - brilliant :) If ye want You can get it in every Polish shops :) Highly recommend !!
